Thai Dessert : Tub Tim Grop (Rubies in Coconut Milk ) ทับทิมกรอบ

          Tub Tim Grop is very popular Thai dessert.Because it is delicious,colorful and easy to make.If you eat Tub Tim Grop with sweeten coconut milk and shaved ice.That make you feel tasty and refreshing.When visit Thailand,try Thai dessert 'Tub Tim Grop'.You will say very delicious.(อร่อยมากๆ)

Ingredients of Tub Tim Grop :
1. 3/4 cup coconut milk
2. red food coloring
3. 3/4 cup+2 teaspoons sugar
4. 1/2 tapioca flour
5. 3/4 cup water
6. 1 cup water chestnuts (peeled and cut int to 5 mm cubes)
7. 1 teaspoon salt

How to make Tub Tin Grop :
1. Add water red food coloring and water chestnuts into the bowl and mix well.Soak all this until the color of water chestnut changed.Drain the water.
2. Put tapioca flour and shake the bowl around to coat the water chestnuts with flour.If you want bigger rubies.spray some water on the water chestnuts and coat them with flour again.
3. Add water heat to a pot.When boiling,put the coated rubies into a pot.Wait until it cooked (it floats).Soak it in cold water.
4. To make syrup,add sugar and water in a pot.Heat to boiling and stew about 10-15 minutes or wait until the sugar dissolve.Set aside to cool.
5. Boil a pot of coconut milk and add salt.Set aside to cool.
6. Scoop 'Tub Tim Grop' up in a bowl.Add the coconut milk and the syrup.Serve with crushed ice.
